Earl Grey Tea - A fairly traded Pekoe grade tea made from the finest tips and
buds of certified organic Darjeeling. This tea is infused with natural bergamot
oil to create a light fragrant cup that can provide a refreshing lift to any

It makes a good accompaniment for breakfast, lunch or afternoon tea, with or
without milk. As an afternoon tea it has a delicate flavor and is may best be vdrank
lightly brewed without milk or sugar. As an everyday tea many drink it strong
with milk.
This popular black tea was named for Charles Grey, the second earl in his line,
who was also prime minister to King William IV in the early 19th century. The
origin of Earl Grey has many theories however, Earl Grey is now a British
institution. Earl Grey gets its elusive
flavor from oil of bergamot. Bergamot [BER-gah-mot]: is a small acidic
orange with a peel that yields an essential oil called essence of bergamot
which is used for perfumes and confections. The peel is used in Earl Grey
tea.

A satisfying cup of tea begins with the quality
of the water. When possible use freshly drawn, cold, filtered water, or spring
water if avaliable. Bring water to a full boil. Pour over one tea bag per
cup, allowing an extra minute or two for the flavor to unfold to its fullest.

double strength before serving over ice.
